It has been a while since I've had a Buffalo Sweat since Tallgrass Brewing Co. went defunct, but this was as close as I could have hoped for. I used the Northern Brewer clone kit as a baseline but substituted for some ingredients that I already had on hand that needed using. I was lazy on my water volume calculations and didn't accurately account for grain absorption, so I ended up with just over 4 gallons of a bit stronger beer. Roastiness was prominent but not overbearing, some residual sweetness from lactose, full/creamy mouthfeel. I'll gladly brew this one again next winter. |
