Notes

Chipotle to be sliced lengthways up to the stalk and seeds left in tact: the aim is to expose as much of the chilli as possible. Mangos to de-skinned and then cubed, again aiming to create good exposure .

Chipotle and mangos to be sanitised in vodka for a minimum of 8 hours before the vodka is strained away and the chipotle and mango added to a sanitised muslin bag, add then to the FV. Leave for potential secondary fermentation arising from the fruit sugars for another 5 days before gravity check then racking.
