Notes

Boil 3 gallons of fresh pressed apple cider from local orchard (Isom's in Northern Alabama), 0.6 gallons top-up water, brown sugar and honey for 30 minutes.

Cool and transfer to sanitized fermenter. Add cinnamon sticks, close and ferment for 7 days ~ 70F.

Transfer to secondary for additional 7 days.

Crash cool to 32F for 12 - 24 hours (final settling) then rack to bottles or keg for carbonation.
