Built up starter of wlp001 to brew on the weekend, but didn’t brew until a few days later. Starter was spinning for about 30 hours before crashing in the fridge for 5 days. |

7.1 gallons strike water heated to 165.3 to mash in at 156. Mashed in at 155 and dropped to 152 over 60 minute mash. Stirred and checked temp every 20 minutes. |

Pulled bag to collect pre-boil wort. Drain from the bag was VERY slow. Don't know if it was all the specialty grains or the large amount of oats. Haven't noticed this viscosity before, but I don't do high-adjunct or high-specialty malt beers very often. Need to invest in something that allows me to walk away while the bag drains. Colander or ratchet/pulley with ladder. |

Collected approximately 5.5 gallons into FV. Put FV into fermentation chamber to chill to 66 before pitching yeast slurry |

Bumped up regulator temp to 74, although it never climbed above 69. Weather is starting to get cooler, and I don't have a way to heat the fermentation chamber |

A little bit of a boozy aroma came from the carboy when I went to take a hydrometer sample. Lots of sweetness up front from the chocolate. Thick mouthfeel. A bit cloying maybe. Lower OG and higher FG than expected, but not by much. Hoping coffee will help to cut some of the sweetness, although it is a breakfast stout... |
