Notes

Mash start 1100. After 20 mins temp around 70C so add 2 litres cold water bring temp to around 65-67C.
Start runoff to kettle at 1300. Still around 65C. Good clean looking wort so able to run faster than previous brews.
Collect 25 L and fire up gas at 1340. Add another 3L - total 28. Boil achieved at 14 15. 30Gms Nelson Sauvin in spider in at 1400. Add 50gms Wakatu into wort for late addition at 1530 giving 25 mins boil. Flame out at 1555. Start cooling at 1600. 1700 start running off to fermenter. Collect 21.75L at 1050-52 OG.
2115 Pitch yeast ( MJ M44 saved from Brew 20 earlier today.
Friday 6th 0800 bubbling away nicely every 1-2 secs.
Saturday 7th bubbling every 40-5 secs.
Sunday 8th bubbling every 10-15 secs.
Monday 9th bubbling every 10-15 secs still.
Tuesday 10th bubbling every 15-25 secs. Transfer to MJ Fermenter with 60gms Citra and 60gms Mosaic.
Saturday 21st drop tempo controller to 8C.
Tuesday 24th Gravity 1-12-3.
Bottle and collect 24x750ml and 2x500ml = 19 Litres.
