YB Saison Brett 0.8L on stir plate = 140G cells (pitch half)
Liquid over sample is fruity, lightly phenolic (band aid), nice but not "punchy" |

Accidentally left probe as ambient at 22. Beer about 24. Set TC to 24 also, expecting beer to sit 24.5-25 |

Despite lower gravity, seems fuller. Somewhat fruity. Also dusty - at least it mightn't be an infection in the other |

A little more cohesive flavour and starting to take on more earthiness. No sourness (I was worried from the starter and JK beer) |

TYB Brett Saison Portion
Hay colour, hazy. Pours with nice white head, reasonable persistance.
Light, bright, fruity aroma. Nice banana level.
Taste is almost tart, sharp, and citrus. Grapefruit, citrus rind. Subtle hay/earthy notes but not super funky.
Less herbal/grassy hop notes than the first taste of the JK portion - although I tasted that from the first 500ml which had a lot of particulate. |

A: lemon, fairy floss, clove, light, herbal hoppiness. Light hay funk, but subtle.

M: Low body, light, carbonation bite, light astringency |

20B (TYB)
Spritsy, dry, sharp, lemony, hay, light funk, fairy floss, refreshing, grassy.
Pale blonde, moderate clarity, great head retention
Light body, but some creaminess or something so it doesn't feel thin
Don't change anything! |

Side-by-side of A&B
A: TYB pours more brilliant. Better head, but could be smaller diameter glass
A: TYB is a lot more aromatic
Both are a bit citrus spicy, but TYB more so.
JK maybe has a little more complex vanilla and earth notes, but very subtle
F: JK is more dull. There could be a slight off flavour. Not quite acetic.. more dull bitter hoppiness.
TYB is bright, citrus, shining, some boiled lolly and other sweet flavour hints, but dry finish.
JK is an acceptable beer. TYB is outstanding.
NB: As it warmed up, I think the off flavour in the JK was a plasticy phenol flavour |
