4th gen to 5th gen wlp090. Built up starter a week early due to interruption in brew day. Crashed and kept in fridge for a week. |

Strike water at 160.8 to mash in at 152. Temp started at 151 and dropped 4.6 degrees down to 146.4 after 60 minutes.
Inconsistent mash temps again from a thicker than expected mash. Can Epiphany malts be stickier than other malts? Gravity came out lower than expected so I don’t think it’s an issue of wrong weight like Pals Have Fun II. Might go back to more common maltsters. |

Chilled wort to 80 with groundwater. Transferred to carboy. New kettle with trub dam. Tried to whirlpool with giant whisk but I don’t think it created much of a cone. Lots of trub still made it into fermenter (not a huge issue). Dip tube eventually clogged with about 0.5 gallon left in the kettle. |

Getting better with time. Cleared up nicely. Got a little overcarbonated, but I took the gas hook up off for a few days and pours and it’s settled down nicely. Color and malt taste are indicative of the half Pilsner base. Straw with a little bit of golden hue from the pale and kilned malts. Sharp up from from either bitterness or a low level infection. I’m starting over with a new yeast strain for my next brews. Plastic fermenter could be another source of pickup. Getting some melon flavors from the hops but not much else. Maybe the hop combo is causing the odd bitterness. Overall, not a failure, but not a great beer either. 3.5/5 |
