Notes

Redstar Premium Cuvee yeast

Dissolve sugar in 1 gal cider at 180f, add to fermenter w/ 5 gallons apple cider.
Add pectin, then yeast.Primary for 21 days. Secondary for 30 days. The ABV was around 9%. Add gelatin at secondary for clarity. Add potassium sorbate last 5 days of secondary to kill yeast. Add frozen apple and cranberry at kegging. Great Great cider.
