Cooled wort overnight down to 65° F.
Rehydrated one pack of K 97 Yeast at 97F Then cooled to 75°F.
Pitched yeast and set fermentation chamber to 64° F average. |

Almost gone. This turned out to be a very clean , very slightly tart very refreshing beer. Great with food. Stayed hazy till the end. |
