Cooled to 85 then transferred to bucket and put in ferm chamber set to 62. Decided to ferment at 62 for a cleaner yeast profile. |

Fermentation slowed down a lot, but still going. Moving bucket out of fermentation chamber into room to slowly warm up to room temp (about 75) and encourage full attenuation. |

Took a sample to test SG as the bubbles are still going. FG looks to be hit. Gonna give it another couple of days to clean up. |

Low malt profile If any with some grassy and tropical fruit notes coming through from the hops. Slight ester character from yeast. Very light and crisp mouth feel. |

Added gelatin via soda bottle and close transfer to in post on keg. Leaving on 30 psi for a day to carbonate. |

Made a hop tea with 1oz Centennial and 2 cups of water heated to 170 degrees F. Let sit in a sanitized french press for 1 hour. Strained into co2 purged soda bottle. Cooled and close transfered to keg. |
