Hit 152.9F after dough in, added ice cubes (5-10 total) and brought down to 148F within minutes. Used very old pH strips to test pH and it looked like 4.4.... :/ Don't know if I trust the strips because they're so old but that makes me nervous... Temp went down to ~145F by the end of the mash. |

Only added 2 grams coriander instead of 2.5 g. Smelled pretty powerful after crushing in mortar and pestle so I wanted to pull it back a little. Couldn't really smell or taste it much in the wort (which is good). Chilled to 85F and transferred with ball valve to big mouth bubbler. Took Tilt from Oktoberfest, cleaned, sanitized, and dropped into wort. Set fridge to 18C to let chill overnight. |

Rehydrated and pitched 9am. Raised set point to 20C at 2pm. Noticed foaming on top in the evening. |

Definite krausen. Lots of bubbling (internal and airlock) and activity by the end of the day. |

Super active all day. Very fast airlock bubbling, tons of CO2 bubbling internally, and beer looks very turbid brown. Krausen is quite active but not getting very high. Only about 1 inch as if something is knocking it down or keeping it in check. Could be where it's hitting a ridge on the big mouth bubbler fermenter. |

AM - considered raising temp slightly but decided against it because it still seemed just as active as yesterday when I looked at it before work. |

Raised setpoint to 22C. Activity looked the same but krausen a bit lower. Later on noticed bubbling had reduced by a good bit. |

Unplugged fridge from controller. Krausen reduced to thin layer, slow airlock activity, but still CO2 bubbling and turbid inside. |

Hydro sample tasted very good. No fusel taste but a nice estery belgian flavor profile. Seemed borderline a little sweet, but we'll see how it does cold and carbed. 1.018 FG I think, glitch with brewersfriend deleted the gravity but I'm pretty sure that's right. |

Opened the "X" bottle (last from the bucket that I had to slosh around a lot) and it seemed overly sweet and estery. I guess it was oxidation because the carbonation was fine and the non "X" bottle I opened a couple days later was much better. |

Poured very dark brown with spritzy carbonation that formed a small head that immediately dissipated (maybe because of youth?). Smell was very nice trappist esters more on the fruity side than spicey as well as dark fruit/raisiny malt and some alcohol. Taste was nice with the same esters, dark fruit, and pleasant alcohol. Had a hint of that great vinous quad flavor too. Dry enough but borderline on the fuller and sweeter side. Not so much as to make it unpleasant though. Carbonation is great, fairly high but not overly so. Only complaint is the mouthfeel and sweetness are on the high end of what I would have liked. Excited about seeing how this is with some age on it. |
