Using harvested yeast from previous brew. This will be 4th gen WLP090. Overbuilding to harvest approximately 85 billion cells from 1 pint of starter slurry. Stir plate for 48 hours. Krausen had dropped after 36 hours. Crashed in refrigerator overnight before brew day. |

Strike temp dropped was 1 degree lower than planned. Mashed in at 149.7. Dropped to 147.0 after 60 minutes (good insulation; hot and sunny day). |

Lower than expected gravity, but grain bill was unknown (mix up in order from ABS). Lower than expected final volume, but boil was interrupted and lengthened by rain. Had to stop the flame for a few minutes multiple times to get the pot covered. Maybe about 20 minutes total. This could have caused more evaporation than planned and may lead to increased bitterness. |

Fined with gelatin. Regulator set to 37. We’ll see if gelatin does anything. This is the second of two unknown grain bills. This one could have wheat malt in it. Although, cold crash will last 3-4 days since I’ll be out of town for work. |

Not as good as I was hoping for. Astringent or just overly bittered, but this one has a sharp taste up front. The boil was over 60 minutes due to rain interruptions, so this could have some contribution. The bittering hops could have been in there for 90 minutes or so. 30 minutes extra is an estimate. During this time, I turned the burner off and held an umbrella over the pot, but the wort would still be hot enough to extract bitterness. Harshness fades after your palate is use to it, but pretty unpleasant up front. Disappointing since I was looking forward to this hop combination. |

Dumped the remainder of the keg. Aroma was good, but the taste had something really off. Astringency, too much bitterness, infection (possible sources include rain water and plastic carboy). Might try to replace carboy in the near future. Stainless would be nice... |
