Stepping up 2nd gen WLP 090 (approx 75 billion cells) from 5/19/19 to 3rd gen; overbuilding again to harvest approx 80 billion cells. 1.8 L starter (1.037 OG) will produce about 300 B cells. 1 pint of overbuild will contain approx 78 billion cells. |

Mash consistency was EXTREMELY thick! Way thicker than any of my previous mashes. I did not know whether this had to do with new maltster (Epiphany malts from North Carolina) or with errors in amounts of grain or water. Water amount was correct, so this led me to believe I was sent extra pounds of grain accidentally. Gravity confirmed this. The thick consistency caused hot and cold spots in the mash. I tried stirring as much as possible during readings, but temp readings varied by a few degrees. I'm hoping this won't lead to any problems. |

Could only collect about 6.5 gallons of wort due to unexpectedly high weight of grain bill; had to top off with 0.5 gallon of R.O. water to achieve 7 gallons. This will lower the total overall ion concentration, but shouldn't affect the final profile too much. 0.5 gallon is only a 7% increase in volume. |

Krausen dropped, so I'm trying out the Cold Crash Guardian again. Last brew (Dark Lark) had about a pint of Star San solution sucked back in when cold crashing. I'm okay with a little bit, but not a whole pint... Abandoned the Cold Crash Guardian after blowoff spilled into the bag, but this can be avoided by waiting til krausen drops (while fermentation is still active) and adding the Guardian in line. Bag started to fill rather quickly. |

Cold Crash Guardian seems full, but no CO2 bubbles are coming from the Star San solution. This leads me to believe there is a leak in-line somewhere. This defeats the purpose of the CCG (to prevent oxidation suck-back), by providing a source for Oxygen to be pulled back in. My guess is where the top screws onto the Guardian. Maybe some plumbers tape could help to seal this off. |

Began cold crash. Dry hop had about 30 hours contact time with 72 degree beer. Suggestions from Janish indicate maximum extraction of oils after 24 hours. Fine with gelatin after beer drops below 50 degrees. |

Packaged in a sanitized and purged keg (filled completely with sanitizer solution, then drained). 38 psi for 18 hours to produce approximately 2.8 volumes CO2. |

Keg kicked on 8/25. Not bad but got a little solvent-like toward the end. Galaxy/Amarillo wasn’t as good as Citra/Amarillo combo. |
