Added 3 gallons chilled Publix purified water. Cooled it to 100 F. Topped up with leftover distilled water from before. Drained to plastic ferm bucket and set fridge to 18 C overnight. |

Rehydrated and pitched 1 pack lalbrew New England. Raised fridge temp from 18 c to 20 c. Cooling only, no heat in fridge.

Beer surface had a good number of yeast rafts that looked like large flakes kind of. Same type of flakes on the yeast cake at the bottom. Not super compact yeast cake but it did have these large flakes. Gravity sample was very clear and smelled and tasted very good. Had a really nice stone fruit, red apple, tropical ester thing going on. Not sure if it is particularly British, but seemed very pleasant. Reading was 1.0105 @ 69.7F. |

Poured out ~2.5 gallons of the coffee milk stout :*( from keg 1. Rinsed and sanitized keg and line (no PBW or removal of posts). Siphoned with large autoshipon and silicon tubing. Filled it pretty much right up to the inner gas tube. Purged 5x @ 38psi and left in fridge at 40 psi. |

Pretty delicious. Poured dark amber and fairly clear with just a slight haze (though there were also some yeast chunks as would be expected with such a young beer and the chunks I sucked up siphoning). Smell was delicious dark stone fruit with some red apple and just a touch of English yeasty funk. Taste was the same as smell with perhaps a bit of yeasty sweetness that was not unwelcome, but I do think it will get even better with lagering. Carbonation was just on the low side but that was good for this beer. Great smooth light mouthfeel but not too light. Overall a really good beer with a ton of just the right Englishy esters that I want. I think I found a new all around workhorse yeast. Excited to see how this beer will be after a couple of weeks in the fridge. |
