Pitched yeast at 80 F and put in fermentation chamber to bring temperature down. By next morning temperature was down to 64F.
Original plan was to pitch over yeast cake of sour beer that was brewed on Thanksgiving 2018 but Ellen accidentally dumped 95% of the cake. Pitched on what was left of the cake and added a handful of medium toast American oak cubes that were pre-boiled for 10 min |

Pitched dregs from "Almanac Dogpatch Currant" and 1 bottle of Homebrew Sofie clone (which has live brett but no bugs).
Beer was in the fermentation chamber until now. Bubbled over onto carpet and into fridge and smelled rancid. Tasted beer to make sure it tasted okay and no infection present. Tasted clean thin and boring. |

Tasted it today. very sour. Has a nice funk to it too. Very delicious. Ali suggested paring with a "bitter" fruit like blood orange or grape fruit.
With stable gravity reading, would be ready to bottle. |

Bottled on thanksgiving 11/26/2020
On 8/13/2020 I bottled half this beer and racked the other half onto pluots. Bottled the pluot portion today (11/26/2020).
