Notes

Mash pH should be 5.35 at end of Beta-Amylase rest.

"Molasses" is Lyle's Black Treacle.

Follow Mash schedule. Ferment at 68 for first three days, then up a degree per day until 76 hit. 10 days of primary fermentation. Rack to secondary; let sit for 2 - 4 weeks in dark location @ ~68 - 72. Keg; let keg rest 4 - 6 months. When you can't stand it, use secondary CO2 tank and regulator to hit 4.0 volumes of C02 in keg; let sit for 3 - 4 weeks. Push at 8 PSI, and enjoy the big fluffy head of QUAJIRA!
