TDS of strike water was 227 ppm. Added half a campden tablet during heating.
Strike water was at 165 in the kettle. Dropped to 160 when added to the MT. Ambient temp this morning was 39F. After 12 lbs of grain was added the mash temp stabilized to 152.4F. Mash pH was a bit low. Measured 4.75 at mash temperature. |

2 qts were taken out of the MT at the beginning, after some grain was added, and held in a sauce pot until the end of the mash. Just before lautering, the 2 qts was boiled for 5 minutes and added to the mash while lautering. |

Propane tank at 24.2 lbs after brew day. Chiller took about 35 minutes to cool to 85F. Ambient temp was 54F during chilling. |

Transferred to bucket fermenter (FV-2) with spigot at the bottom. Placed in fermentation chamber (heated & cooled) set at 66F. Aluminum foil was wrapped over the hole while it cooled. |

Fruity, spicy. The yeast showing some signs of being expressive. Not any hint of resin pine or chocolate. Not surprised though considering the early sample. |

FG higher than expected. Tasted balanced with good malt character. Not a lot of hops. Fixed a gas side blow off to let it ferment a little bit longer, and added some yeast nutrient. Might transfer to another keg before carbonating. A few more days, then I'll cold crash before transferring. |

Tasted upfront chocolate notes with a noticeable bitterness. Gravity is still dropping so I didn't add the yeast, but I moved the keg inside so it can sit at 68F for a few more days. |

Bright and clear when finished. Carbonating in the same keg it was transferred into from primary. 1 day at 30 psig and then drain trub. Tasted nice and bitter, lots of dark malts on the nose. Hopefully will turn out okay when chilled and carbonated. |

Bitter and roasty. Malt is in the aroma but nice and bitter taste. Might have a little burnt from that 2 quarts I took out in the mash. |

This is perfect. Mostly carbonated now. Bitterness is spot on and malt character is perfect. The color is a bit darker than I expected but maybe next time use pale chocolate malt. Can't wait to share it with the homebrew club for the advent calendar. Took about 5 pints out so far, will bottle 17 bottles in a few days |
