I used aluminum foil instead of foam stopper, and put in the ferm chamber at 69F. I made it around 3pm |

starting mash, used 13 gallons of RO water, 4.5 into mash tun the other in HLT. Then added 1 teaspoon of calcium Chloride to mash tun and 1.5 teaspoon to HLT |

started mash, checked ph, it is spot on. But on 6 minutes in
12 minutes in PH at 5.26 temp at 151
30 minutes in PH at 5.3 temp 150
50 minutes in PH at 5.4 temp 150 |

Did not use the O2 to oxygenate. I thought it was empty, but I was just using it wrong. Use a paint stirer instead. Only mistake of the day
also, recipe called for 90 minutes of boil, was losing wort quick, so shortened to 70 minutes.

Day 1 of fermentation.
Noted the Temp on the Conical reads 78, the temp of thermometers inside fridge reads 62. I want the beer at 64, so I set the override lower to 62, I had it at 64
Also the reading deal is set in water. I know the beer will warm as it fermintates. . |

added the rest of the hop as per the recipe Did not drop any trub, as I think the yeast have a little more work to do. Smell a little off flavor, but do not taste any off flavors. |

Starting a 48 hour D-rest, push temp to 68 as per Wyeast website. On the taste there is still a hit of that same damn taste I’m fighting. Not as strong, but I hope the d-rest will clear it up |

Getting better, there is a sweet taste to it. Karen still tastes it, but I think it has mellowed a bit. |
