Pitched 2 50 mL vials of 1318 slurry harvested in March. 35 mL of slurry each. Let come to room temp for about 3 hours. Shook to aerate for about 2.5 minutes. |

No signs of ferment in the am. Maybe some CO2 bubbles (very slight, maybe not) in pm with possible very slow airlock. I did warm fermenter to 17.5 or 18 C though. |

Dumped Midgard Pale Ale (T_T) and put this in the 3 gallon keg on line 3. Purged x5 @ 40 psi and left for 24 hours at 40 psi. Used new 1/2 in siphon and silicone tubing for transfer. Very fast. |

Hydrometer sample very pale yellow and hazy. Quite hoppy and thoroughly delicious, but with definite hop bite. Needs to settle out for a bit. |

This beer had a pretty strong vegetal hop bite until probably the last few pints I drew. Couldn't really pick out particular hop flavors past the general astringent raw hop flavor until after about a month of conditioning. After that the hop bite was still there a bit, but you could really get some of the sweet tropical hop flavors as well as a firm dankness. The malt flavor was actually nice too but I think it was a little boring. I guess these beers really just need to condition for about a month to drop that hop bite. Obviously the hop bite doesn't render it undrinkable for me at least, but I do think it was much better after conditioning. |
