Mash started at 149, finished at 146.8. Using left over drippings from mash to create a small yeast starter to activate yeast. Boiled for 5 min then cooled. |

Mash went really well. Very good efficiency. Doing a quick 5 min boil to sterilize wort then dropping temp to pitch lacto. |

Added 30ml of lactic acid to get pH down to 4.2 from 5.6. pH dropped to 4.04 after adding lacto starter. Covering with seran wrap and letting sit. |

Found out my pH meter wasn't calibrated after pitching lacto. pH is down to 3.62 after calibration. Shit... Should still be fine. Just used way to much lactic acid. |

Used heating mats to hold temp. Temp holding steady at 104. pH down to 3.33. SG held at 1.044. |
