Created 1.5 liter yeast starter to get ~300 billion cells. Saved .5 liters (~100 billion cells) for next batch. Will pitch about 200 billion cells. |

Hot day, could only cool to 75. Moved to fermentor, placed in ferm chamber set to 65 for about 2 hours. Pitched yeast at 68. Fermentation was active the next morning. |

Big aroma notes of banana, with slight clove and honey backbone. Taste matches the aroma in the back of the throat. Put the sample in the fridge for about an hour and the aroma faded a little while it was colder. |

After fermenting at 65 for about 5 days I bumped the temp up to 70 (1 degree every 12 hours) and let it sit at 70 for a couple days. |

Did not cold crash, transferred to keg directly. Letting keg sit a room temp for a day or two as I wait for kegerator space to open up. |

Did a diacetyl test by microwaving ~2-3 ounces of the beer, covering it with foil and a rubber band and letting it sit in warm water for about 30 min. When removing the foil I got what might have been diacetyl, but was more of a warm honey aroma compared to buttered popcorn. I dont believe it was diacetly but I'm not 100% sure. If anything it may be a very small amount that is not off putting for the style. |
