Used Joel's Alfalfa honey after fermentation has slowed?

OG = 1.070 (Brix 17) Predicted ABV = 7%
FG = 1.010 ABV = 7.5%.
(Decided to not add honey)

Tim noticed long boil may have caramelized some of the sugars and made for a nice sweetness
