Dry-hopped per recipe; bumped up thermostat to 75; tasted a pipette sample; good malt flavor, but not much hop flavor coming through, a little bit of earthiness. Dry hop should help to bring out more flavor and aroma. Malt taste is pretty good, but different than previous grain bills. May be the Vienna, but something is really standing out. Nice sweet bread/cracker taste; reminds me of golden grahams. Pale Ale malt was from a local maltster (North Carolina). |

Pre carb sample is nice and clear. Good color from the Vienna. Biscuit with a little bit of toast up front. Maybe a bit too much on the Vienna for a hoppy pale. Would be great for an Oktoberfest grist. Good bitterness. Not much hop aroma coming through, malt kind of dominates. Will force carb at 40 psi for 20 hours before reducing to serving pressure. |

Carved sample is nice and drinkable. Malt flavor tastes like Golden Grahams with a little bit of biscuit. Very drinkable with low FG. Body doesn’t seem too thin though. Cloudy first pour but gravity sample was very clear. This one should clear up after a few days. I’d give this one a 3.5/5. Maybe conditioning will help to improve flavors. |

Keg kicked. This one was a solid beer for 4.7% ABV. Had a lot of malt flavor from the Vienna malt (very much like Golden Graham cereal), but was a little lacking on body. This made the beer very drinkable, but felt a little thin. I would absolutely brew this one again, especially for friends who don't want a hoppy ale. |
