Premium Light American Lager Holy Light was brewed in the tradition of some of the great American lagers. It was brewed with a slightly undermodified Moravian Pilsner Malt, as well as corn and rice to help lighten the body and lend a crisp and refreshing finish. Knockout at 45° F (7° C), oxygenate and pitch, let free rise to 50° F (10° C), and hold at that temperature for fermentation. Once 8 points from final gravity, let free rise to 60° F (16° C) for a diacetyl rest and hold for 7 days. Slowly cool, no more than 5° F (2.8° C) per day, to 32° F (0° C), hold for 2 days once temp is reached, then keg.
