4 gallons of apple juice, 1 lb brown sugar, yeast nutrient and dry US-05 straight on top. This should be a winner. |

It's about high krausen right now. Fermentation started very slow, it was clear for a few days, then started bubbling, and now is cloudy and has a krausen. Airlock activity is slowing, should be done fermenting fairly soon I'd think... |

Still tastes like straight apple juice still, surprised the fermentation has proceeded so slowly. Don't know the OG, but it can't have been much more than double what the gravity is now. Back of the envelop calculation of OG gets me roughly 1.06 (1.048 apple juice plus .012 from brown sugar. 0.25 lb/gallon = roughly 3 gram/ml = roughly 3 degrees plato = roughly 12 gravity pts.) |

Tastes a lot more like cider, and is nearly done fermenting! Has somewhat of a weird taste, I'm wondering if that is the yeast, which isn't a super popular cider yeast. Will probably package soon to preserve some of the last of the sugars. |

Broke all my test tubes so no gravity measurement, but it tastes pretty good and dry. Should be much better once cold and carbed. |

Basically fully carbonated, and tastes pretty good! A bit tart, but it has that distinctive apple juice taste still. Fairly dry but not overly so. |
