Ended up boiling for almost 120 minutes instead of 90 because the boil wasn't strong enough in the beginning. Needed extra time to get to 1.051, overshot slightly anyway. |

Cooled to 49 f and pitched decanted 2.5 liter starter. Used 02 bottle to oxygenate. Set fermenter for 52 f, in the middle of suggested range. |

Checked for gravity, half way to expected FG. Raised temp to 57 f as per fast lager schedule. No sulfur notes or off notes that I can detect. Real fizzy and sample has krausen the next day. Tasted real yeasty, bready. |
