Notes

Kit recipe called for 2 lb of DME — I only used 1 lb. I also increased the batch size to 6 gallons to hit desired (lower) ABV.

Yeast starter — Initially thought I was going to brew this in mid-February, so I made this 500ml starter on 2/8/19. Realized on 2/10/19 that I would not be brewing that weekend, so I put it in the fridge. Pulled it back out on 3/26 and pitched it into another 500ml of starter wort. Cold crashed morning of 3/2/19. Decanted morning of 3/3/19 and allowed to sit at room temp for several hours before pitching into 6 gallons of wort.

Secondary fermentation — 3 gallons will stay in 6 gallon fermenter. 1.5 gallons will go into 3 gallon carboy with (INSERT AMOUNT) boiled kumquat puree. 1.5 gallons will go into 3 gallon carboy with (INSERT AMOUNT) boiled kumquat puree and (INSERT AMOUNT) szechuan peppercorns.
