Heat 8 gallons to strike. Add salts for balanced II profile. While adding first mash grains, strike gets to 170 F. agitate to cool, but tear grain bag. Will have to empty and clean kettle after first mash. Temp gets a little high. Thermometer is behaving oddly.
Wort was transfered to 8 gal plastic fermentor and kettle was cleaned. Wort was added back to kettle and heated. Add back up to 8 gal (was at 7). Overshot temp to 170, so stir and add a little water to bring to 162f. Add grains slowly. Temp stays similar, so grains were stirred to drop temp below 160. Let temp fall to 148 before reheating. |

Bring to boil. Foams a ton. Add 2 oz of 12.4 aa magnum hops. At 50 min, add 1.5 oz ekg and chiller. Flameout at 60 min. Add 1.5 oz ekg at roughly 200f.
Begins to rain during chilling, have to move setup inside garage. Got rained on but not in i think. |

Chilled to just under 80, then transferred contents of kettle to plastic bucket fermentor. Started getting windy, so closed the garage door. Hopefully no crud got in the fermentor from being inside near the wood piles.
Pitched 3 packets of s-05.
Next morning, active fermentation. |

Strong boozy chocolate. A little bitter, but I think i might be tasting some of the crud in my cloudy sample and not beer. |
