White Labs British Ale Yeast (WLP005) added to 1000ml starter and stirred at room temperature for 24-26 hours before stirrer switched off overnight for brew next morning (Sunday 27th) |

Bubbling with a continuous stream of CO2, very vigorous and only 24 hours post-pitching.
Gravity already dropped from 1.078 to 1.055 (3.1% abv as it stands). |

Bubbling has slowed somewhat by 7am, gravity now 1.031 @ 22oC which equates to 6.1% abv |

1.028 reading 24-hours apart so assume fermentation complete, a little short of final gravity, but as was a higher gravity than expected after mashing, it's not unexpected. Still a healthy 6.6% abv |

Finings added to Fermenator and moved to garage for 24-hours to cool before kegging. No blooms on the top and little trub. A very clean and clear fermentation. White Labs 005 has done very well but only attenuated 64%, a little lower than 70% expected! but a high gravity brew may explain this. |

Crystal clear green beer on transfer, probably didn't need the finings. Yeast perfectly formed in bottom of cone, a triumph of fermentation! |

Absolutely rammed with dark malt flavours. Mouth feel spot on and balanced, aftertaste longing and thick. Tasted against The Kernel IPA (Black) and Widmer Brothers Pitch Black IPA where it overwhelms them in almost every department, better mouthfeel and fuller flavours. A top, top brew |
