This did not go to plan!
Left the small flame on the burner, so at end of mash it was ~75 degrees.
Attempted to compensate with some 'dry enzyme' and holding it at 65 degrees for another 30 minutes.
Final gravity was way too low, partly because volume was high, but not entirely!
Fermentation got off to a slow start.
Hoping that there are enough fermentable sugars in the end to make it drinkable!

A little dry, but not ruined.
Will find a sugar to bump up the FG with.

Added 450g of maltodextrine a week ago, it's fermented out to 1.025, which is a point below the original target FG, so pretty much perfect given the ABV I think.
I guess we'll find out in a few weeks!
 
Notes

Modified from the original recipe.
Added the D2 candi and also the chocolate malt.
