Crashed to 45 degrees. Tomorrow will drop yeast and dose with 4 ounces of brewed jasmine tea. Will also add sterile water to bring down ABV to under 8%. |

Added 2.5 Gallons of of sanitary water with concentrated tea. Used 2 ounces of Oolong whole leaf, and 2 ounces of Jasmine pear. ABV is calculated to be at 6.89% |

Packaged 12, 12 ounce bottles with 4 bottle conditioning tablets each for a medium carb. Also kegged 2 1/6th bbls kegs. Started blitz carbing on kegs. Will tap on Monday 2/11. |

Used centrifuge to spin down sample of un-carbed beer. The tea rounded out the beer very well. Some notes are banana, clove, spice, and floral from the tea. |
