Notes are near awful as too much brew was consumed during the process.
10 gallons of water from WM purchased, no ice.
Set up went smoothly except for not having grains ground the day before. Batteries on drill were sub-standard.
Also had 7 oz of Crystal 60 instead of 1 lb of Crystal 40. Added 9 oz 2-row to the grain bill to keep grain amount at roughly 11 lb total with the thought that lowering the amount of crystal at a higher lovibond would result in about the same SRM levels. Minimal impact on the OG expected.
4+ gallons of water set to boil (above level of thermometer). Mash tun pre-heated using tea kettle as usual. Some lag time between pre-heat and starting mash due to issues with grinding the grains. "PPPP".
Hopefully avoided poor product on this one but we shall see. More f-ups to come.
8:43 pm Mash set at 152-ish for 60".
First use of hop spider!! Me likee...
1 oz Chinook added @ 60"
1 oz Perle added @ 20"
Added chiller at 10" but had to remove hops to do so.
No whirlfloc added.
Specific gravity measured with refractometer after 1st running: 1.037
Sparge 20" @ 168 D
After sparge: 1.032
Some lautering undertaken at both steps.. Had no water left at end of session.

No boil over! Loving the 10 gallon kettle!
Completed the 1 hour boil and decided to let it run a little longer to raise the OG. No idea how much longer from the notes taken at this point.
Prepped laundry sink with fridge ice and water.
Moved kettle to sink and began siphoning into previously sanitized carboy when cooled to 64 D (??)
Leave this existence for several hours and resume activity at/near 2:15 AM.
Find kettle fully drained, cap carboy, carry it downstairs. do some minimal aeration by shaking, set up airlock and go to bed without pitching. |

Not sure how we reached OG, but using hydrometer that is what we did. Did more aeration of wort and pitched S-05 yeast. Several hours later added remainder of yeast left in packet. Realized i did not have second packet in store. Set heating unit for carboy at 65 D and covered carboy with a towel. |

We have achieved fermentation. No need for boil-off tubing at this time.
Clean-up completed of all equipment. Kettle needed special attention as B-Brite did not remove all deposits. |

Interesting bottling exercise. Wanted bulk to be in keg.
Had 1 grenade and 8 12-oz bottles cleaned and sanitized.
Boiled 1 oz corn sugar for 7 minutes
Released cold break into separate pan.
Pushed 1 gallon brew from secondary keg into sanitized pitcher after adding the corn sugar syrup.
Filled 1 32 oz grenade from pitcher.
Used sanitized funnel to pour from pitcher into bottles minding to keep splashing minimized. 7 12-oz bottles.
Capped the lot and called it done.
Pressurized the remaining amount in the keg to 30 psi. |

Clarity - still cloudy, so it's not cold haze
Head - White and beauty full, long-lasting, nice lacy foam remains in the glass.
Carbonation - small bubbles
Aroma - heavenly grapefruit citrus
Taste - green. Wonder if the bits of hops are adding to the bitter greenness of the taste. |
