The Yeast Bay's Lochristi Brett blend requires patience. 100% Lochristi hoppy pale. Finally, after 4 months in the bottle, this is tasting like a beer I'd want to drink regularly! Younger, it was sweet and flabby (despite 1.006 FG), with too much of that fruity/waxy Brett character. Now the funk is getting earthier and it's drying out - much more enjoyable. I had the same experience with my 100% Lochristi brown ale, except by the time I realised how good it was getting, it was running out...
