Notes

Kettle soured for 36 hours at 95 deg F. Used 500 mL (~16 oz) of GoodBelly drink: https://www.amazon.com/GoodBelly-Blueberry-Acai-Probiotic-Juice/dp/B00UUSWQ4K to introduce lacto. The specific strain can be found here: https://goodbelly.com/2018/08/29/lactobacillus-plantarum-299v-probiotic-hero/ . I bought it at Whole Foods. Lactic acid was added to bring ph to 4.5 before pitching lacto. ph was 3.4 in 36 hours. Slight blueberry aroma remained after fermentation and carbonation. This was quite pleasant.
