Water treatment summary:
55 litres needs to be carbon filtered to remove chlorine.
Mild Ales require 100-150ppm CaCO3 (water is 352ppm) so therefore 200-250ppm reduction required
= CRS @ 1.25ml/litre (= -230 ppm reduction)
= 68.75ml in 55 litres |

Brewlabs East Midlands 1 slant, reconstituted into 250ml and put on stirrer |

9am - 55 litres of brew water filtered through carbon to remove any residual chlorine.
68ml of CRS acid solution added to bring carbonates level down to approx 125ppm (from 352ppm). |

Despite a vigorous early fermentation, fermentation had slowed after 3 days (Sun) but was only 1.020, had dropped to 1.016 by day 5 (Tues) and still 1.016 on Day 6 (Weds). Rehydrated Young's ale yeast added on day 6 (Weds) to see if we can drop the gravity by Friday (day 8). |

More liquid left in Fermenator (probably 2 litres) but still packaged almost 40 litres.
Kegs purged and pressurised to 12-15psi and left to condition.
Polyclar and finings used 24 hours later were both used ahead of kegging |

First taste, a classic mild ale. Light hops, great mouth feel and subtle after taste of roasted malt flavours. Tasted against St Peters Mild for comparison, knocks the socks off the SPM, a very very quaffable mild, despite the poor yeast attenuation and low alcohol content - top brewing! |
