OG 1.106 x 3.5 gallons (3.871) + OG 1.271 x 2 gallons (2.542) (6.413) / 5.5 gallons = 1.166 adjusted OG
-Fermentation started within hours. Next day I started adding the DME admixture. 2 quarts added on day 2 with yeast nutrient.
-2 quarts plus more yeast nutrient added on day 3 - tons of sulphur smell from the carboy.
-Added 3 quarts and yeast nutrient because i'm going out of town for a few days. Bubbling had slowed down in airlock so i roused the yeast.
-10/10 Added final admixture and more yeast nutrient. 6 gallons total. Krausen started almost immediately. |

Pretty damn good for being soo young. Sharp alcohol bite to it. Roused the yeast. See how it looks in another week. I want it to drop under 3 before i add oak and bourbon. |
