5 gallons pulled from the initial mash runnings. Boiled down to 3.5 gallons. 2.5 gallon admixture of honey, DME, and maple syrup added 1 quart per day with yeast nutrient - after fermentation was started.
3.5 gallons = 1.1 OG
2.5 gallons = 1.14 OG
OG 1.1 x 3.5 gallons (3.85) + OG 1.14 x 2.5 gallons (2.85) (6.7) / 6 gallons = 1.117 adjusted OG |

Definitely less hot than last check. Good flavor comes through. Cinnamon and cocoa with a tiny touch of heat in the finish. Close to bottle time. |

Flavor check. Dried out a bunch since last time. But not wild or infected. Possibly the combo of racking to a secondary and adding the cinnamon and cocoa kicked off more fermentation.
Still a bit boozy. Cinnamon and cocoa flavor. Tiny, tiny spicy pepper heat in the finish. |
