Based on Drew's Saison Experimentale; scaled to 1 gallon and reduced a little for 75% efficiency. Target 1.050 OG / 20 IBU.

Ferment at 65F 3 days then ramp to ambient.

Sanitize and blend very ripe persimmons to pulp; add to fermenter after primary fermentation completes.
