A Scottish Pale Ale from the William Younger brewery
recipe calls for 57 IBU in one 2 oz, and two 1 oz. hop additions; after receiving hop pellets with higher bitterness, I shifted the sizes to 1.25 oz, 0.5 oz., and 2 oz. this is part of my "big hops later" strategy to emphasize hop aroma while maintaining balanced beers.
recipe called for White Labs WLP028 Edinburgh Scottish Ale Yeast, Farmhouse was out of that one and called to ask if it was okay to substitute Wyeast 1728 Scottish Ale yeast
1728 fermentation temp range is from 55-75 degrees
based on William Younger brewing records from 1848, I need to shoot for these fermentation temperatures:
day 1 - 59° F
day 2 - 61° F
day 3 - 63° F
day 4 - 66° F
pre-boil gravity - 1.042
O.G. - 1.053
I pitched at 63° F, and kept the beer between 56 and 62° F for the next three days.
Racked on Saturday 12/1. Yeast had settled to the bottom.
Bottled on Saturday 12/8.
