Other notes:

  • We seam to always overshoot on light beers and undershoot on dark.

  • Re sparged a number of times, i think we need to move the mash tun off wheels to make it more stable. The sparge water seams to flow down the sides from channelling.

    -Maintained a higher sparge temp by pushing liquor to 95 during sparge. Added water when it dropped too low and mixed being careful not to put to much in and overheat.

  • Aerated and dropped 4 packs of US-05 @60Grams.

  • fermentation was quick and peaked around 48 hours.

    Tasting notes:
    Ben - might be a little high on the bitterness for a session beer, probably needs to be 27-28 ibus. Would be good to try a bit of wheat malt if lowering the ibu to below 25. Probably wouldnt drop the amarilo in late hop additions, its mango taste is very strong. Did balance well with mosiac.
