Forgot to measure the specific gravity... This one is going to ferment in the master bathroom at ambient room temperature - 28 C here in Singapore!
Brewed two batches at the same time! Half batch of Belgian Double and full batch of Grand Cru. Next time find a bigger jug and brew two big batches! Just fill some bottles if there is no keg available. It only took me 5 hours to brew both batches at the same time. Maybe brew Season's in Singapore next. |

Transferred all three small jugs to the small 10L keg and left it outside to ferment a little longer.
Sample from the keg yielded refractometer specific gravity of 1.031 or 8.1Brix at 28C.
You can definitely taste the strong dark Australian honey I used... not sure if I'm fond of it or not. The memory of the taste stays with you and makes me want more. Did taste sweet. Note that the primary fermentation was in three separate jugs that had various levels of yeast and distilled water top-up amounts. I expect it to ferment a little more now that it's blended. |

Measured 1.032 twice and 1.031 with some sediment on first sample.
Converts to 8.4 Deg Brix, and 1.016 after correction. |
