cooled very quickly, consider alternative hopping method (get some little bags) miss calculated mash tun quantity consider foregoing mashout. ending kettle too low had to top water up also added double the amount of irish moss as intended oops |

so took a sample and its still bubbling even though the hydrometer reading is still low advice was to leave it till saterday and bottle then to allow the yeast to complete clean up activity |

not bottling today. still small amount of activity, pre conditioning flavour still lacking initial chocolate i was aiming for. hopefully conditioning should remove the harsh flavour |

More of a red ale this has spicy notes that flutters around at the end of the palate. The initial taste seems slightly less complex making this an easy beer to drink. The coppery taste can be removed by not adding cold water after the brewing process overall good first attempt and if I can't get smokeyness I may return to this recile |
