Notes

BREWING NOTES:
1.5L Starter

Ferment at 68 degrees for 7-10 days
Raise temperature to 70 degrees and let sit for 1-2 days

Dry Hop Schedule:
-First dry hop at peak of active fermentation
-Second dry hop (Citra only) once fermentation has slowed
-Third dry hop (Mosaic only) two days after adding second dry hop

Cold crash for 24-48 hours
Transfer to keg and fine with gelatin

COMMENT:
A second go at this one. Original recipe won Third Place in the Pale Ale category of the Manhattan Homebrew Cup. We thought the original recipe had a bit of an ester in the flavor due to the unusually high temperatures in the basement which caused the beer to ferment higher than the recommended temperature range for the yeast. We since got a freezer and, paired with the heat wrap, will be able to control temperatures more precisely.
