Long day.
Killed my fermentation chamber, so used sc-1000 on the keggerator.
Shredded beets clogged the siphon tube, so used a sanitized strainer during transfer.
Also pitched a yeast starter *and* another packet of yeast from the 2nd kit, added to the starter and stirred for a couple of hours.
Stir plate works like a charm. Oh, and I pitched my stir bar. DOH.
The color is a pretty cool deep red. We'll see what happens as it ferments. |

Added a heater to the fermentor today. The temp dropped to 52 overnight, with ambient temp outside being 40. It's a simple 60 watt bulb in a paint can. If it doesn't maintain temp I'll swap it with 100.

Rock steady at 64'F even with an overlight low of 27' outside. I should log ambient temp just for comparison. |

Tilt's been stuck at 1.027 for about a day, so I looked in on it last night and it had a little krausen hat. I removed it with sanitized tongs, cleaned it off, and put it back. Been @ 1.023 all day. Took a refractometer reading and it looked like it was right around 6 brix / 1.026 ish. The correction above is really close to the Tilt so I'll leave it at 6. If it doesn't drop a little by Sat, I'll rouse the yeast and bump the temp a degree or two when I dry hop.

Dry hopped. Tilt's out of whack, and refractometer is, I dunno. See the beta for all the deets. |

Tilt's been @ 1.027 for a couple days now.
Bumped the temp up to 18.9 (66f). We'll see what happens. |

Tilt has been at 1.027 for days.
Bumped the temp up again, to 20c, because it never went up above 64f; now seems pretty steady at 67f. Looks like Ferm chamber temp needs to be set 2-3' higher than desired, even though sensor is on the side of fermenter. |

Bumped the temp again to 69f (20.5C). The stc-1000 was already set to 20.3C (68.5F), I set it to 23C (1.5C offset). I'll check and adjust in the am, if need be. Goal is to go one more day, fine Fri and Cold Crash Sat, Bottling & Kegging Sunday. |

Took the stc down to 21.5c(70.7f); now it's at 69f(20.5) from a high of 71(21.6c). |

That can't be correct. The Refractometer looked like it was at 5... let's see what Sean Terrill's sheet says:
Original Gravity: 1.0578 (14.23°P)
Estimated Final Gravity: 1.0051 (1.31°P)
Alcohol by Volume: 6.7% (5.5% ABW)
after fudging some:
Original Gravity: 1.06 (14.73°P)
Estimated Final Gravity: 1.0081 (2.07°P)
Alcohol by Volume: 6.6% (5.4% ABW)
So, looks like it's right around 6.5%. And it tastes gooooood!
Xferring to a secondary and adding finings in a bit, ten I'll cold crash until Sunday. Then, bottling & kegging! |

Soo..... xferred to a secondary and added gelatin finings.
Tilt was calibrated to 1.004 in 78F water. Reading 1.026 in the beer...
Refractometer reading was 5 or 6. That equates to:

0.74 °P, 1.003
Alcohol By Volume:
7.56%

OG - Corrected:

6 seems more realistic.

Tastes interesting. I get Bubblegum, but wife (who has a better palate, says no, she gets Beet... maybe my palate is confused. It's definitely drinkable though.
Still not sure of FG. Hydrometer says 1.004 - I think; the opaque cylinder makes it hard to read..., Refractometer says 6,

Put remainder of .75 gal into TrailKeg. Sample still tasted good. Putting at 15psi until tomorrow night, then down to 10. |

This was a good IPA. I think the beet juice added a grassy note; might try doing another batch - simple IPA, but process the beet juice first, mash with it, and see what happens... |
