Notes
  • Brewed on 12/22/18
  • Expecting mash efficiency of 77% which implies a pre boil gravity of 1.053
  • Mash temp was initially 151F but was able to settle it at ~150F
  • Hit 12.7 plato pre boil gravity which converts to 1.051 vs. 1.053 target so 74% mash efficiency vs. 77% expected
  • Expecting to boil down to 6 gallons so boil-off tool estimates 1.064 OG. Actual original gravity reading was 15.7 plato which converts to 1.064 vs 1.064 expected. This is due to boiling down to 5.75 instead of 6.0 gallons.
  • After boil had ~5.75 gallons (expected 6.0) in the kettle and ~5.5 gallons made it into the fermenter
  • Pitched the yeast starter and set fermentation chamber at 64F, increased to 65F on day 4, 66F on day 5, and 67F on day 6 (held here)
  • Added first round of dry hops on day 4 (Wednesday, brewed on Saturday), added second round of dry hops on day 7 (Saturday).
  • Packaged on 1/1/19, FG was 1.013 (at 69F) which converts to 1.014 so 76% attenuation vs 75% avg. and 80% expected (just guessed high which I typically experience but not necessarily with this yeast).
