Pepper flavor is very subtle. No heat at all. Will need to check post ferment to see how it has matured to determine how much additional pepper to add |

Great color, flavor, and a very subtle pepper heat at the end. Definitely needs a bit more pepper with seeds for a day or two in secondary. Going to move fermenter upstairs to finish out fermentation by Sunday and then transfer & add Raspberry, pepper and cinnamon. |

Final gravity test before adding two roasted jalapeños (divides with seeds and ribs), two whole sticks of cinnamon and 3lb puréed raspberries + 1tbsp of pectic enzyme |

Very strong raspberry taste - maybe too much. Slightly tart but the pectic enzyme probably helped. Cinnamon is noticeable, pepper is pretty faint, but does show up. |
