Notes

10/6/18: Well, we're going to try making one of the most iconic and difficult-to-brew beers ever, the Czech pilsner. Wish us luck.

PROCESS NOTES:

-need 50-ish ppm calcium for water to limit sulfate/bicarbonates (bitterness will be harsh otherwise)... use distilled water to cut if needed

-90 min mash at 150°F, sparge as usual w/ ~2.5 gal filtered water

-add yeast nutrient at 15 min dur. boil, whirlfloc at 5 min

-4 gallons distilled water and 1 gallon filtered water for strike
