Didn't bother fannying around with siphons, just pitched the cooled wort from the kettle into the fermenting bucket. |

I think this one's going to finish far too high as well. And the more I read, the more I think it's because I mashed at 69°C and kept it at 67ish. Same for Dichotomy. |

Still a little zing on the tongue in terms of mouthfeel but pretty sure the fermentation is slowing down if not nearly there. Very scary thought bottling a beer at a FG of 1.05ish. Might have to go down the route of only using 1g of sugar per 330ml bottle to be on the absolute safe side. |

Pitched a sachet of rehydrated Safale US05. Didn't take a sample as hydrometer reading would have just been disappointing. Leaving it to do its thing till at least Weds or Thurs. |
