Notes

Toast ( 325 degrees until golden brown and starting to caramelize) and scrape from the skin about 10 pounds sugar pumpkins. Put in a grain bag and add to strike water. Heat up water and pumpkin to 162 degrees. dough in and add pumpkin to mash tun. Temp should steady around 154 degrees. Mash as usual. Add pumpkin to about 1/4 of beer wort volume and bring to a boil for 30 minutes. Add pumpkin wort back to main boil kettle and continue as usual. Add honey @ flameout.
