Added campden tablets. Waiting for 24 hours to check gravity and pitch yeast. Used apples from my mom’s culinary tree. Cut all the bad parts/cores out of the apples. Very clean apples going in. Green/pink big apples. |

Oxygenated for 2min 20 sec with pure O2. Pitched yeast, pectin enzyme, and aerated per recipe instructions. Fermenting at 62. Cider gravity was 1.046. |

Oxygenated with pure O2 for 1min 10sec at 12 hr point. Added 4g fermaid O and degassed at 24 hours. |

Sweet, nice apple and honey flavor. No off flavors. Finished a bit higher than I thought it would. I'm going to look into restarting fermentation. |
